You will need:
- Seasonal fruit & citrus
 - 1/4 cup of sugar
 - 1/4 cup of brandy ot Cointreau
 - 1 bottle of dry, crisp white wine
 - Sparkling water
 - Fresh mint to garnish
 
To make:
- Add fruit, & sugar to a pitcher and muddle with a wooden spoon
 - Add brandy or cointreau & muddle again to combine
 - Allow the fruit to soak for an hour or two, then add the chilled wine & top with sparkling water
 - Garmish with fresh fruit & mint leaves before serving.
